Party Parmesan Pasta Salad

Don't you love my alliteration, heh heh. A really nice salad perfect for buffet or picnic. Makes a large amount (hence the party ) - decrease recipe as needed. You can omit salami or use whatever veggies you wish (such as cucumber, green onion, red pepper, grated carrot etc.). Has a very nice pesto flavour.
Ingredients:
6 cups penne pasta (750 g)
1/2-1 cup fresh grated parmesan cheese (both usually available in deli) or 1/2-1 cup asiago cheese (both usually available in deli)
1/4 cup extra virgin olive oil
1/4 cup red wine vinegar
2 tablespoons dijon mustard
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
3 ounces thinly sliced salami (optional)
3/4 cup kalamata olive, pitted (or other good quality olives)
2 cups cherry tomatoes
3/4 cup green pepper, chopped
1/2 cup chopped fresh basil
Directions:
1. In large bowl, whisk together Parmesan cheese (you can use 1/4 cup dehydrated if you can't find fresh), oil, vinegar, mustard, garlic, salt and pepper; set aside.
2. Cut salami into thin strips, slice olives or leave whole as you wish. Cut tomatoes in half.
3. Meanwhile, in large pot of boiling salted water, cook pasta according to package directions or until just al dente. Drain, reserving 1/2 cup (125 mL) pasta water. Rinse pasta under cold water; drain well and add to dressing along with reserved pasta water.
4. Add salami, olives, tomatoes and peppers; toss to combine. Add basil and toss again.
