Here are 4 variations of egg appetizers that are great served together or by themselves. Each variation fills 6 hard boiled eggs. Ingredients:
4 scallions, trimmed and thinely sliced |
2 tablespoons sour cream |
1 teaspoon lemon juice |
2 tablespoons caviar |

lemon rind, to garnish |
caviar, to garnish |
1 cup shrimp, cooked and peeled, reserving 12 for garnish and the rest chopped |
1 ounce cucumber, peeled and diced |
1 teaspoon catsup |
1 tablespoon mayonnaise |
1/4 teaspoon lemon juice |
salt, to taste |
pepper, to taste |
dill sprigs, to garnish |
1 1/2 ounces cooked ham, chopped |
4 walnut halves, very finely chopped |
1 tablespoon dijon mustard |
1 tablespoon mayonnaise |
1 teaspoon white wine vinegar |
1 pinch cayenne pepper |
salt, to taste |
pepper, to taste |
paprika, to garnish |
gherkin, to garnish |
1 teaspoon garlic puree |
3 tablespoons creme fraiche |
salt, to taste |

1/2 teaspoon green peppercorn, crushed to garnish |
Directions:
1. Caviar Variation: Mix all the ingredients, except for garnish, with the egg yolks, spoon back into egg whites and garnish with lemon rind and caviar. 2. Shrimp Variation: Mix all ingredients except for the 12 reserved shrimp, with the egg yolks, spoon back into the egg whites and garnish with the reserved shrimp and dill sprigs. 3. Nutty Variation: Mix together all the ingredients, except for garnish, with the egg yolks, spoon into the whites and garnish with paprika and gerkhin slices. 4. Garlic and Green Peppercorn Variation: Mix the garlic, creme fraiche, egg yolks and seasoning. Place in piping bag and pipe into the egg white. Sprinkle with the peppercorns. |
