This is an old recipe that is still a winner. If you don't want to use a mold it can be layered in any clear glass bowl and still make a lovely presentation. The cream cheese mixture can be omited if you prefer a lower fat version. Ingredients:
1 (3 ounce) package raspberry gelatin powder |
1 cup water, boiling |
1/2 cup orange juice |
1 (7 ounce) can mandarin oranges |
1 (15 ounce) can cranberry sauce, whole |
1/3 cup nuts, chopped |
1 tablespoon mayonnaise |
1 (3 ounce) package cream cheese |
Directions:
1. Dissolve gelatin in boiling water. 2. Add orange juice. Chill until slightly thickened. 3. Add oranges, cranberry sauce and nuts. 4. Pour half the gelatin mixture into a 1.5 quart ring mold. 5. Chill until firm. 6. Combine cream cheese and mayonaise. Spread over firm gelatin mixture. Pour remaining gelatin mixture over cream cheese. 7. Chill until firm. |
