My Grandmother used to serve this with roast beef.
Ingredients:
parsnip
butter
dried breadcrumbs
Directions:
1. Peel and cook parsnips (the amount required).
2. Strain and mash well with a little butter.
3. Place in a buttered pie dish and smooth down with a knife.
4. While hot spread a knob of butter over and sprinkle with dried breadcrumbs.
5. Put in a hot oven or under a grill until golden brown about 10 minutes,
6. Serve meat and other vegetables. (Freezes well).
