I had this chowder at an East Texas Bed and Breakfast a few years ago and couldn't quit eating it. It is comforting, flavorful and down right good. Enjoy Ingredients:
1/4 pound salt pork diced |
1 medium white onion chopped |
3 tablespoons all purpose flour |
4 medium parsnips peeled and diced |
4 medium potatoes peeled and diced |
2 cups water |
4 cups milk |
8 ounces chopped fresh spinach |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Cook salt pork in large heavy pot over moderate heat until crisp. 2. Remove with a slotted spoon and reserve. 3. In remaining fat cook onion and flour until onion is tender but not browned about 5 minutes. 4. Add parsnips and potatoes stirring to coat well and cook 5 minutes. 5. Add water then bring to a boil and simmer covered 30 minutes. 6. Add milk and spinach then bring to a boil and serve garnished with reserved salt pork. |
