Parsnip, Carrot, Leek and Ginger Soup |

So good! You would swear there was cream or butter in this soup. Ingredients:
2 1/2 cups parsnips |
2 1/2 cups carrots chopped |
2 tablespoons fresh ginger |
2 cups leeks |
2 tablespoons olive oil |
5 cups low sodium chicken broth |
1 1/4 cups white wine |
Directions:
1. In a pot, cook leeks and ginger until softened. 2. Add parsnips and carrots. Cook 7-8 minutes until they start to get soft. 3. Pour in broth and wine. Bring to a boil, lower heat and simmer for about 20-30 minutes until the vegetables are soft/tender. 4. Remove from heat and place in blender. Blend until smooth. Serve! |
