These potatoes will make a delicious accompaniment to any meal Ingredients:
1 1/2 lbs small new red potaoes - scrubbed |
1 tblspn vegetable oil |
1 medium sized onion - chopped |
1 small clove garlic - crushed & chopped |
1 cup chicken broth |
1 cup fresh parsley - chopped & divided |
1/2 tsp pepper |
Directions:
1. Peel a strip of skin from around each potato 2. Place potatoes in cold water - set aside 3. Heat a large skillet over med/high heat & add oil 4. Saute onion & garlic for about 5 mins until tender 5. Add broth & 3/4 cup parsley - mix well 6. Bring to a boil 7. Drain potatoes & place in a single layer in skillet 8. Bring to a boil & then reduce heat 9. Simmer covered for about 10 - 15 mins or until potatoes are tender 10. Remove potatoes with a slotted spoon to serving bowl 11. Add pepper to skillet & stir 12. Pour sauce over potatoes & sprinkle with remaining parsley |
