These potatoes are one of my favorites. Goes good with a nice steak. Ingredients:
1 1/2 lbs small new red potatoes, scrubbed |
1tbsp vegetable oil |
1 medium onion, chopped |
1 small clove garlic, crushed |
1 cup chicken broth |
1 cup chopped fresh parsley, divided |
1/2 tsp pepper |
Directions:
1. Peel a strip of skin from around the middle of each potato 2. Place potatoes in cold water, set aside 3. Heat a large skillet over medium high heat; add oil 4. Saute onion and garlic for 5 minutes or until tender 5. Add Broth and 3/4 cup parsley 6. Mix well 7. Bring to a boil 8. Place potatoes in a single layer in skillet 9. Return to a boil; reduce heat 10. Simmer, covered, for 10 minutes or until potatoes are tender 11. Remove potatoes with a slotted spoon to a serving bowl 12. Add pepper to skillet; stir 13. Pour sauce over potatoes 14. Sprinkle with remaining parsley |
