Parsley Red Potatoes

Ingredients:
2 teaspoons olive oil
1 garlic clove, minced
2 cups small red potatoes, quartered
1 1/2 tablespoons fresh parsley, chopped
1/4 teaspoon salt
1 dash crushed red pepper flakes
Directions:
1. Heat oil in a medium nonstick skillet over medium heat. Add garlic and cook 1 minute stirring frequently. Add potatoes and cook 18 minutes or until tender, stirring frequently. Stir in parsley, salt, and pepper.
