Ingredients:
24 oz. potatoes
2 tbsp unsalted butter
1/4 cup lowfat milk
2 tbsp flat-leaf parsley, chopped
1/4 tsp kosher salt
1 black pepper, freshly ground
Directions:
1. Scrub potatoes thoroughly with a stiff brush. In a large saucepan, cook potatoes in a small amount of boiling water for 15-20 minutes or until tender. Drain and cut into quarters.
2. Add butter, milk, parsley, salt and pepper, tossing gently to coat. Mash if desired.
