A different potato side dish that doesn't take long to make. I like to serve this with an omelette. Ingredients:
4 potatoes, peeled and cut in 1 inch cubes |
2 cloves garlic, minced |
1 tablespoon olive oil |
1 cup water |
2 tablespoons chopped fresh parsley (or 2 tsp. dried) |
salt and pepper |
Directions:
1. Heat oil in frying pan. 2. Sauté garlic and potatoes until slightly golden. 3. Add water, parsley, salt and pepper. 4. Cover and simmer for 15 minutes, stirring occasionally. 5. (The water should evaporate.). |
