This homemade pesto is a great way to use up extra parsley and adds fantastic flavor to sandwiches, pasta, and more.
Ingredients:
2 cups fresh flat-leaf parsley leaves
2 tablespoons toasted pine nuts
1 1/2 tablespoons grated fresh parmigiano-reggiano cheese
1 teaspoon extra-virgin olive oil
1/4 teaspoon salt
Directions:
1. Combine all ingredients in a food processor; process until smooth.
