Parsley-Caper Broiled Fish |

A light and flavorful way to cook fish. Ingredients:
1 1/4-inch-thick onion slice |
2 fresh parsley sprigs |
2 anchovies |
2 teaspoons drained capers |
1 small garlic clove |
2 6-ounce orange roughy fillets (about 3/4 inch thick) |
1/2 lemon |
Directions:
1. Preheat broiler. Mince first 5 ingredients together. Brush baking sheet lightly with oil. Place fish on prepared baking sheet. Sprinkle onion mixture over fish. Season with pepper. Broil until fish is just cooked through, about 5 minutes. Squeeze lemon over fish and serve. 2.
