Parsley Buttered New Potatoes |

Ingredients:
3 pounds new potatoes |
1/2 cup butter or margarine, melted |
1/2 cup chopped fresh parsley |
salt and pepper to taste |
Directions:
1. Pare a 1-inch strip around center of each potato. Cover and cook in boiling salted water 40 minutes or until tender. Drain potatoes, and set aside. 2. Combine butter, parsley, and salt and pepper to taste; stir well. Pour mixture over potatoes, coating thoroughly. |
