Parmesan Zucchini Spears

Goes good with any kind of meat and potatoe dish. I served it along side Lasagna.
Ingredients:
3 small zucchini(1lb.)
1 tsp.olive oil
1/2tsp.grated lemon peel
1/8tsp.salt
1/8tsp.pepper
1tbl.grated parmesan cheese
Directions:
1. Cut zucchini lengthwise into quarters,then cut in half crosswise.
2. In a large nonstick skillet,cook and stir zucchini in oil over medium heat for 4 mins.
3. Sprinkle with lemon peel,salt and pepper.
4. Cook and stir 4-5 minutes or longer or until zucchini is crisp-tender.
5. Remove form the heat;sprinkle with Parmesan Cheese.
6. Serve immediately.
7. Note*When I prepared it I also after the 4 mins.squeezed some of the fresh lemon juice over the zucchini,and covered it to help it steam and get done.Then removed the lid.(optional)
8. Also I preferred to put the olive oil over the zucchini in a bowl and mix it together and then put in the warmed pan.(optional)
9. We liked it.
