Parmesan-Yogurt Chicken

Ingredients:
1 (2 lb) broiler-fryer chickens, skinned and cut up
2 tablespoons fresh lemon juice
salt and pepper
1/2 cup low-fat plain yogurt
1/4 cup low-fat mayonnaise
1/4 cup scallion, siliced
2 tablespoons dijon mustard
1 tablespoon worcestershire sauce
1 teaspoon fresh thyme
1/4 teaspoon cayenne pepper
1/4 cup parmesan cheese, freshly grated
Directions:
1. Preheat over to 350 degrees.
2. In a large baking dish, arrange chicken in a single layer. Drizzle with lemon juice then sprinkle with salt and pepper.
3. Combine yogurt,mayonnaise, scallions, mustard, worcestershire sauce, thyme and cayenne pepper ina small bowl and mix well.
4. Spread mixture over chicken and bake for 50 minutes. Drain off juices.
5. Sprinkle chicken with Parmesan cheese.
6. Preheat broiler and broil chicken for a bout 3 minutes or until cheese melts and browns slightly.
