Parmesan Veggie Stir Fry-ci |

A quick non-Asian stir fried veggie dish that's great with Italian pasta main dishes. Ingredients:
1/2 lb sugar peas |
8oz fresh mushrooms, chunked |
2 large green onions or 1 leek, cut in 1 inch pieces |
1 large red pepper, sliced in strips |
2 cloves garlic, minced |
1t butter |
1t olive oil |
juice from 1/2 lemon |
1/2 cup fresh parmesan, shredded |
fresh basil leaves, coarsely chopped |
salt and fresh ground pepper |
Directions:
1. Add butter and olive oil to a stir fry skillet over medium high heat. 2. As soon as butter begins to melt, add garlic then all veggies and toss to coat. 3. Cook for only about 3-5 minutes so veggie are warm but still crisp. 4. Add lemon juice, salt and pepper and basil and toss, again. 5. Remove from heat and add cheese to top after placing in serving dish or add to each individual serving on plates. |
