Yummy spinach dish great as an anchor for a brunch or side dish for dinner. Ingredients:
12 oz. fresh spinach |
1/2 cup part skim ricotta cheese |
1/2 cup grated parmesan cheese |
2 large eggs, beaten |
1 clove garlic, minced |
1/4 tsp. salt |
1/4 tsp. pepper |
3 tbs. parmesan |
Directions:
1. Preheat over to 400 or 375 if using glass dish 2. Pulse spinach in 3 batches in a food processor until finely chopped. (As a rough measure, you can just use the food processor bowl, filled as 1/3 of the spinach.) 3. Transfer spinach to a medium bowl and add the Ricotta and Parmesan equal to 1 cup, the eggs, garlic, salt and pepper. Stir to combine. 4. Coat 8 cups of a muffin pan or an 8x8 baking dish with cooking spray. If using muffin tin, the cups will be very full. 5. Bake until set, about 20 minutes. 6. Sprinkle the 3 tbs. of Parmesan on the top. 7. Let sit for about 5 minutes and serve. One serving is two muffin cakes or 1/4 of the 8x8 inch baking dish. 8. Goes well with toast and fruit. |
