Parmesan, Spinach and Barley Casserole |

This comes from Southern Living Slow Cooker cookbook. Ingredients:
1 (32 ounce) container chicken broth |
1 (16 ounce) can red beans, rinsed and drained |
1 (8 ounce) package mushrooms, sliced |
1 1/2 cups barley, uncooked |
1 1/2 cups onions, chopped |
1 teaspoon italian seasoning, dried |
1 teaspoon pepper |
1 teaspoon salt |
1 (6 ounce) package baby spinach |
3 ounces parmesan cheese, shredded |
Directions:
1. Place first 9 ingredients in a 4 quart slow cooker; stir well. Cover with lid; cook on high 3 hours. Add spinach. Cover and cook 15 minutes; stir well. Sprinkle each serving with cheese. |
