Similar to a creamed-style spinach, but better and better for you. Ingredients:
1 1/2 tablespoons unsalted butter |
1/2 onion, minced |
1 1/2 tablespoons flour |
1 1/2 cups milk |
2 (10 ounce) packages frozen spinach, thawed and liquid squeezed out |
3/4 cup parmesan cheese, grated |
1/2 teaspoon lemon peel, grated |
1/4 teaspoon nutmeg, freshly grated |
Directions:
1. In a medium saucepan, melt butter over medium heat; add onions and cook until softened, about 5 minutes. 2. Add flour and stir for 1 minute; remove from heat and gradually whisk in the milk. 3. Return to a simmer until slightly thickened, 2 minutes. 4. Stir in spinach, 1/4 cup water, 1/2 cup Parmesan cheese, lemon peel, and nutmeg; cook until sauce is thick and spinach is tender, 10 minutes. 5. Thin with additional water, if necessary, stir in remaining Parmesan, and season with salt, if necessary. |
