Came up with this one night when had to create a nice meal off the top of my head. Also had FreshTomato Pasta, Spinach Stuffed Tomatoes, and Parmesan Crescent rolls. Ingredients:
4 boneless, skinless chicken breasts (or whatever you have) |
evoo (or, 1/2 stick melted butter) |
1 c parmesan cheese |
1/2 package dry italian dressing mix |
a few t real mayo (i use dukes) |
garlic pepper |
Directions:
1. Mix together cheese, dressing mix, and 3 or 4 shakes garlic pepper, set aside 2. Rinse chicken and pat dry 3. Brush a thin layer of mayo on each piece of chicken 4. Coat with cheese mixture 5. Brown each side in electric skillet (or your fave pan) 6. Cover, cook 30 minutes, or until juices run clear (med-low heat) 7. This is moist, juicy chicken. You can thicken the pan juice with a cornstarch/water slurry, or leave the way they are. I left them as is here. Spoon a little juice over the chicken. 8. ** The coating will scorch quickly, start with a lower temp than you normally use to sear chicken. Turn it over 2 or three times during cooking process ** |
