Parmesan Shrimp Cocktail with Basil Dip

Directions:
1. For Shrimp:
2. /2 c. dry bread crumbs
3. /4 c. grated parmesan
4. T. chopped fresh parsley
5. /2 t. salt
6. /2 t. pepper
7. jumbo shrimp, peeled, deveined and tails in tact
8. grape tomatoes
9. T. olive oil
10. For Basil Dip
11. /2 c. basil leaves
12. T. olive oil
13. T. lemon juice
14. clove garlic
15. salt and pepper
16. /4 c. mayo
17. grape tomatoes, chopped
18. Combine bread crumbs, parm, parsley, salt and pepper. In another bowl, toss shrimp and tomatoes with olive oil.
19. Dredge shrimp in breadcrumb mix. Skewer shrimp and tomatoes and refridgerate for 30 min.
20. Pulse basil, 1 T. olive oil, lemon juice, garlic and salt and pepper in food processor until minced. Add mayo and pulse until blended. Garnish dip with tomaotes.
21. Grill shrimp until cooked, 2-3 minutes on each side.
