Ready, Set, Cook! Hidden Valley Contest Entry. This is a tangy new twist to the traditional family meatloaf. Even folks who say they don't like meatloaf really do like this meatloaf ! Ingredients:
2/3 cup hidden valley® original ranch® dressing |
1 cup parmesan cheese, grated (reserve 1/3 cup) |
1 tablespoon worcestershire sauce |
2 eggs, beaten |
1 1/2 cups breadcrumbs |
1 lb ground pork |
1 lb ground sirloin |
2 medium shallots, finely chopped |
Directions:
1. Heat oven to 375 degrees F. 2. Line a 13 x 9 x 2 inch pan with non-stick aluminum foil. 3. In a large mixing bowl, combine dressing, 2/3 cup Parmesan, Worcestershire, eggs and breadcrumbs and stir well. 4. Crumble the ground pork and ground sirloin into the breadcrumb mixture. 5. Add the chopped shallots. 6. Gently mix by hand until thoroughly combined, being careful to not overwork it. 7. Shape mixture into a loaf and place in prepared pan. 8. Bake uncovered 1 hour or until meat is done medium well. 9. Remove from oven, sprinkle reserved Parmesan over the top and allow loaf to rest 5 minutes before serving. |
