Parmesan Potatoes in Foil |

Easy! This recipe is for a single serving but you can make multiples. Ingredients:
1 medium yukon gold potato |
1 tablespoon margarine |
1 tablespoon onion soup mix |
1/4 cup fresh grated parmesan cheese |
1/2 teaspoon black pepper |
cooking spray |
1 piece aluminum foil, 8 . 5-inch x 11-inch piece |
Directions:
1. Preheat oven to 400°F. 2. Cut potato in half lengthwise, then cut each half into 6 cubes. 3. Lay foil down on a baking sheet and give a light spritz of oil spray, then pile potato cubes into the middle. 4. Drop margarine on top (no need to spread around) then sprinkle with soup mix, parmesan and pepper. 5. Fold foil around potatoes loosely like a little present and bake for 45 minutes. |
