These are very good and just right to eat at a cookout we had them the 4th as one of many foods then. If you scoop the pulp out with a melon baller the shell is very smooth inside. Ingredients:
12 small round red potatoes |
1-1/2 tsp. olive oil |
3/4 cup minced onion |
1/4 cup uncooked, diced turkey bacon (2 slices) |
1/8 tsp. freshly ground pepper |
4 garlic cloves, minced |
1/2 cup (2-oz.) grated fresh parmesan cheese |
1 tsp. rubbed sage |
Directions:
1. Cook potatoes in boiling water 15 minutes or until fork tender, drain. 2. Heat oil in a nonstick skillet over medium-high heat. 3. Add onion, bacon, pepper and garlic. 4. Saute 2 minutes or until tender. 5. Preheat broiler. 6. Cut potatoes in half, carefully scoop potato pulp, leaving a 1/4 shell. 7. Mash the potato pulp with a fork, stir in cheese and sage. 8. Add to onion mixture, stirring well. 9. Spoon about 1 Tbsp. potato mixture into each shell. 10. Arrange stuffed potatoes on a baking sheet and broil 3 to 4 from heat. 11. Broil 3 minutes or until lightly browned. |
