Naomi's Home Companion by Naomi Judd Ingredients:
2 cups water |
1/2 tsp salt |
1/2 cup grits |
1 tbs finely chopped, seeded, fresh poblano chile |
1/2 stick or 1/4 cup butter |
1 cup grated parmesan cheese |
1/2 cup heavy cream |
1/8 tsp white pepper |
Directions:
1. In a medium saucepan, bring the water and salt to a rolling boil. Slowly stir in the grits. Reduce the heat to low. Cover the pan and cook, stirring occasionally, until thickened and smooth, 15 to 20 minutes. 2. Stir in the chile, butter, cheese, cream, and white pepper. Bring to a simmer and then simmer to blend flavors, 1 - 2 minutes. Serve immediately. |
