Parmesan Peas ânâ Rice are a wonderful complement for any meal. My husband, John, likes rice but isnât crazy about peas, and Iâm just the opposite. It's a great compromise! Ingredients:
1/3 cup uncooked long grain rice |
1 green onion, chopped |
1 tablespoon butter |
1 cup chicken broth |
1/8 teaspoon pepper |
2/3 cup frozen peas, thawed |
1 tablespoon grated parmesan cheese |
Directions:
1. In a small saucepan, saute rice and onion in butter until onion is tender. Stir in broth and pepper. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. 2. Add peas; cover and cook 5-6 minutes longer or until liquid is absorbed and rice is tender. Stir in cheese. Yield: 2 servings. |
