A delicious trick for roasting parsnips Ingredients:
30g grated parmesan |
1lb parsnips |
85g plain flour |
duck fat |
garlic cloves |
salt and pepper |
Directions:
1. Peel, halve, cut out stalky centres and cut into bite size pieces 2. parboil 3. meanwhile heat duck fat in roasting pan in oven 4. put flour, parmesan, salt and pepper in to a bowl and mix 5. strain parsnips and coat generously with flour mix 6. coat well with duck fat 7. add garlic 8. and bake for an hour basting at least twice 9. once they are crispy and brown 10. squeeze garlic and serve hot |
