Parmesan Pan-fried Smashed Potatoes |

This original recipe didn't have garlic. We however use garlic crushed, mushrooms, and chopped onions also which we pan fry before putting in the potatoes. Ingredients:
8 medium red potatoes |
1/2 cup extra-virgin olive oil |
1/2 cup grated parmesan cheese |
Directions:
1. Cover potatoes with cold water in 4-quart pot. 2. Add 1 tablespoon kosher salt. 3. Boil until almost tender, about 12 to 15 minutes. 4. Drain potatoes and transfer to baking sheet. 5. Lightly crush potatoes to 3/4-inch thickness with potato masher. Heat oil in large, heavy skillet over medium-high heat until it shimmers. 6. Transfer potatoes with spatula to skillet, then lower heat to medium-low. 7. Cook, turning once, until golden brown (about 20 minutes). 8. Serve sprinkled with Parmesan cheese. 9. Season with fresh ground black pepper and salt or garlic salt. |
