I love this side dish served with a nice thick steak. Ingredients:
2 tablespoons olive oil |
1 small onion, chopped finely |
2 garlic cloves, minced |
28 ounces chicken broth |
2 cups orzo pasta |
3/4 cup parmesan cheese |
salt and pepper |
2 tablespoons parsley, chopped |
Directions:
1. Saute onion in olive oil 3-4 min, add garlic and saute another minute or so until onion is soft and begining to turn golden. 2. Add broth and bring to a boil, stir in orzo, reduce to a simmer and cover with lid. 3. Cook while stirring occasionally for approximately 15 min or until liquid is gone and pasta is tender. 4. Remove lid, add cheese, parsley, and salt and pepper to taste. |
