Parmesan Mashed Potato Cakes

I love potato cakes and love to add things to them and make them a meal in one!
Ingredients:
leftover mashed potatos
about a cup of shredded parmesan cheese
real bacon bits
1-2 chopped green onion
1-2 slightly beaten eggs
Directions:
1. Spray griddle with non- stick spray and heat
2. Mix everything together
3. Form into patties
4. Fry each side until cripsy golden on each side
5. Enjoy!
6. Can also use other shredded cheese, sesame seeds, top with hollandaise, spice it up with jalapenos, cilantro, etc... so many options!
