This recipe is from Sunny Anderson. Ingredients:
2 1/2 cups orzo pasta |
1 garlic clove, minced |
1/4 cup chopped red onion |
1/4 cup freshly chopped fresh parsley leaves |
1 lemon, zested and juiced |
1 tablespoon olive oil |
1/4 cup freshly grated parmesan cheese |
1/2 teaspoon salt |
1/2 teaspoon fresh ground black pepper |
Directions:
1. Cook orzo as directed on package. 2. In a large bowl, toss together orzo with remaining ingredients. Can be served warm or chilled. |
