Parmesan Herb Spaghetti Squash |

This is a recipe I obtained from an estate sale in 1992. Ingredients:
1 spaghetti squash cut lengthwise into halves and seeded |
2 tablespoons sliced green onions and tops |
1 teaspoon minced garlic |
2 tablespoons butter |
1/4 cup vegetable broth |
1 teaspoon italian seasoning |
1/3 cup grated parmesan cheese |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
Directions:
1. Place squash cut sides down in baking pan then add 1/2 hot water. 2. Bake covered at 400 for 40 minutes then remove squash from pan and turn cut sides up. 3. Fluff strands of squash with tines of fork. 4. Sauté green onions and garlic in butter in small saucepan until tender. 5. Stir in broth and Italian seasoning then heat to boiling. 6. Spoon half the mixture into each squash half and toss then sprinkle with parmesan and toss. 7. Season with salt and pepper then serve while warm. |
