This is so good. So many great flavors combined into one delightful dish. Can't go wrong with this one. We love it and know you will to. Enjoy. Ingredients:
9 ounce package refrigerated cheese filled tortellini |
1/2 cup carrots peeled and diced |
1/2 cup sweet red pepper diced |
2/3 cup canned artichoke hearts drained and quartered |
8 olives |
2 tablespoons pesto |
2 tablespoons olive oil |
2 teaspoons freshly ground black pepper |
1/4 cup parmesan cheese freshly shredded |
Directions:
1. Prepare tortellini according to package directions then rinse under cold water and drain well. 2. Place in serving bowl. 3. Cook carrots in boiling water until tender then rinse under cold water and drain. 4. Add carrots, red pepper, artichokes and olives to pasta then toss with pesto. 5. Add olive oil then season with black pepper. 6. Refrigerate several hours to allow flavors to blend. 7. Toss with shredded Parmesan cheese prior to serving. |
