12 multi-grain saltine crackers |
1/4 cup grated parmesan cheese |
2 tablespoons finely chopped fresh parsley |
1/2 teaspoon dried basil |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1/4 cup buttermilk |
4 boneless skinless chicken breasts |
Directions:
1. Heat oven to 400°F. 2. Place cracker in a large bag and crush w/a rolling pin. 3. Add parmesan, parsley, basil, salt and pepper to bag and shake to combine. 4. Pour crumbs into a shallow pie plate. 5. Place buttermilk in a shallow plate. 6. Dip chicken in the buttermilk, then coast both sides of chicken in cracker mixture. 7. Place chicken on baking sheet and bake at 400°F for 30 minutes. |
