PARMESAN CRUSTED BAKED TOMATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Patrick Estate in Canton, Texas in 1981. Ingredients:
3 teaspoons olive oil divided |
4 slices tomato |
2 tablespoons bread crumbs |
2 tablespoons parmesan cheese grated |
1/4 teaspoon onion powder |
1/4 teaspoon garlic powder |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
Directions:
1. Rub a sheet pan with 1 teaspoon olive oil. 2. Place tomato slices on pan and drizzle with 1 teaspoon olive oil. 3. Combine bread crumbs, parmesan cheese, onion powder, garlic powder, salt and pepper. 4. Place a thick layer of mixture on top of each tomato and drizzle with remaining olive oil. 5. Bake at 425 for 20 minutes until golden brown. |
