Parmesan, Chicken and Broccoli Pasta |

This is such a delicious pasta dish - so easy to make - a quick easy, evening meal!! Ingredients:
125 g whole wheat spaghetti, uncooked (1/3 of 375g package) |
2 tablespoons calorie-wise zesty italian dressing |
2 garlic cloves, minced |
1/2 lb boneless skinless chicken breast, cut into strips |
2 cups small broccoli florets |
1 cup chopped chopped tomato |
1/2 cup part skimmmed mozarella shredded cheese, divided |
4 teaspoons 100% parmesan light cheese, grated |
Directions:
1. Cook Spaghetti as directed on package. 2. Meanwhile, heat dressing and garlic in large nonstick skillet on medium heat, Add chicken and broccoli; cook and stir 5-7 minutes or until chicken is cooked through. Stir in tomatoes and 1/4 cup of the mozzarella cheese; cook 1-2 minutes or until heated through, stirring occasionally. 3. Drain spaghetti; place on serving plate. Top with the chicken mixture, remaining 1/4 cup mozzarella cheese and the Parmesan. |
