From the chicken only cooking light book. We skip the rice and the chicken broth. Ingredients:
380 grams chicken |
8 oz mushrooms, sliced |
1/2 cup yellow onion, chopped |
1/2 cup dry white wine |
1 tbsp olive oil |
1 cup parmesan cheese, grated |
1 tsp garlic, minced |
1/4 tsp black pepper |
1/2 tsp thyme |
Directions:
1. Saute garlic, onion, thyme, and mushrooms in olive oil. When onions are translucent add bite sized chicken pieces. Add wine and simmer until chicken is done. Grate cheese in and serve. |
