This is a favorite from a lady my grandma knows- I have made it several times and it is stinking good. Beware, though, this is not a low fat dish! I like this best with fresh Parmesan, but the Kraft sprinkles will do just fine. Ingredients:
2 cups fine breadcrumbs |
3/4 cup grated parmesan cheese |
1/4 cup chopped fresh parsley |
1 garlic clove, crushed |
2 teaspoons salt |
1/8 teaspoon pepper |
1 cup melted butter |
8 chicken breasts |
Directions:
1. Set up a couple shallow dishes. Pour melted butter into one, and the other ingredients (except chicken) into the other. Dip each breast of chicken into the butter first, then the crumb mixture, then place in a 9x13 pan. When finished, pour remaining butter over the chicken and back at 350 degrees for one hour (or until cooked). No need to turn the chicken, just baste with pan drippings. 2. Throw out the remainder of breadcrumb mixture, if there is any. |
