Parmesan-broccoli Timbales

kind of like a mini quich, only not
Ingredients:
1 tablespoon butter
1 small onion, minced
2 cups frozen chopped broccoli, thawed
1 cup half and half
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon pepper
1/4 cup grated parmesan cheese
3 eggs
Directions:
1. preheat oven to 325'F
2. grease 4 small baking cups
3. heat butter in a large skillet over medium high heat
4. add onion, cook until tender, about 5 minutes
5. drain broccoli and pat dry
6. place in a medium bowl
7. heat half and half almost to boiling
8. add half and half, onion, salt, nutmeg, pepper and parmesan to broccoli, mix well
9. add eggs to broccoli mixture, mix with a fork until smooth
10. por into prepared baking cups
11. place cups in a baking dish
12. pour enough water into dish to cover cups halfway
13. bake until custard is barely set, about 35 minutes
14. let cool
15. run a knife around each cup to loosen timbale
16. invert to serve
