Parmesan Black Pepper Dressing |

Simple but memorable, equally good drizzled on fresh greens or use as a dip for crudites. Ingredients:
1/2 cup buttermilk |
1/3 cup mayonnaise (light mayonnaise can be used although the flavour will be affected) |
1/2 cup fresh, finely grated parmesan reggiano cheese |
1 medium shallot, finely minced |
1 tsp fresh ground black tellicherry pepper, or more to taste |
sea salt or fleur de sel to taste |
Directions:
1. Whisk the buttermilk and mayonnaise together in a glass bowl. 2. Add Parmesan and shallot and whisk together well to thoroughly combine ingredients. 3. Add pepper and salt to taste and chill for about an hour to blend flavours. 4. Makes about 1 cup of dressing. |
