Parmesan Black Pepper Crackers |

From Gail Gand Ingredients:
8 tbls. unsalted butter |
3/4 cup plus 2 tbls. flour |
1 cup parmesan cheese, freshly grated |
1/4 tsp. black pepper, freshly ground |
Directions:
1. Cook time does not include chill time. 2. Preheat oven to 375 3. Cream butter in mixer until smooth and fluffy 4. Add flour, cheese, and pepper and mix at low speed until combined 5. Form dough into disk, wrap in plastic, and chill at least 2 hours 6. Before rolling, let dough sit out 15-30 minutes 7. On a well floured surface with a floured rolling pin, roll out dough into a rectangle a little less than 1/4 inch 8. Dough is delicate so push back any cracks with your fingers 9. Transfer dough to a cookie sheet 10. Prick surface all over with fork 11. With a pizza cutter, cut dough into 1 1/2 inch squares 12. Bake 15-20 minutes, until golden brown 13. Run pizza cutter along cuts again 14. Cool |
