Easy to make low-fat dish. I'm on weight watchers and I find this delicious and terrifically filling. Ingredients:
1 tablespoon olive oil |
2 red onions, sliced into wedges |
2 medium sweet potatoes, peeled and cut into chunks |
6 small carrots, halved |
1 red pepper, deseeded and cut into chunks |
1 yellow pepper, deseeded and cut into chunks |
1 teaspoon cumin seed (optional) |
8 sage or 8 basil leaves |
4 boneless skinless chicken breasts |
4 slices parma ham |
salt & freshly ground black pepper |
Directions:
1. Preheat the oven to 200°C Spoon the olive oil into a roasting pan and add all the vegetables, tossing to coat. 2. Sprinkle the vegetables with cumin seeds (if using). 3. Place two sage or basil leaves on top of each chicken breast, then season with salt and pepper. 4. Wrap a slice of Parma ham around each chicken breast. 5. Arrange the chicken breasts on top of the vegetables. Roast for 30-35 minutes, or until the chicken is cooked and the vegetables are tender. Serve. |
