This Nova Scotian cookie comes from The Joy of Cookies by Sharon Tyler Herbst. They may not be such neat or pretty cookies, but supposedly they are pretty tasty. Ingredients:
1 cup dark corn syrup |
1/3 cup butter |
1/3 cup packed brown sugar |
3 tablespoons milk |
2 cups rolled oats |
1 cup all-purpose flour |
1 teaspoon baking powder |
1 teaspoon ground ginger |
Directions:
1. Preheat oven to 350 degrees farenheit. Grease and flour 3 large baking sheets. In a medium saucepan over medium heat, stir corn syrup and butter until butter melts. Remove from heat. Stir in brown sugar and milk; set aside for 10 minutes. 2. In a large bowl, combine ots, flour, baking powder and ginger. Stir in syrup mixture. Drop dough by rounded teaspoons, 2 inches apart, on prepared baking sheets. 3. Bake 9 to 13 minutes, or until deep golden brown. Cool on racks. Store in airtight container at room temperature for up to 1 week or freeze for longer storage. |
