Parker's Split Pea Soup

Ingredients:
1 cup(s) chopped yellow onions
2 cloves garlic minced
1/8 cup(s) olive oil
1/2 teaspoon(s) dried oregano
1 teaspoon(s) freshly ground black pepper
2 cup(s) medium diced carrots
1 cup(s) (3 small) medium diced red potatoes
1 pound(s) dried split green peas
8 cup(s) chicken stock
Directions:
1. In a 4 qt saucepan on medium heat, saute the onions and garlic with the olive oil, oregano, salt and pepper until the onions are translucent, 10 to 15 mins. Add the carrots, potatoes 1/2 lb split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 mins. Skim off the foam while cooking. Add the reamining split peas and continue to simmer for another 40 mins, or until the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper.
