A little different than the other recipes out there. These are great little potatoes and relatively healthy too. I've seen this done with regular potatoes and a melon baller too. Ingredients:
1 1/2 lbs small red potatoes |
2 tablespoons olive oil |
1/4 cup flour |
2 tablespoons fat-free parmesan cheese |
1 tablespoon parsley flakes |
2 teaspoons dried rosemary |
1 teaspoon dried basil |
Directions:
1. Peel potatoes, and cut into quarters. Brush with olive oil. 2. Place remaining ingredients in a plastic bag and mix. Add potatoes to bag; shake to coat. 3. Arrange in baking pan. Bake at 375 degrees F for 1 hour, turning once. 4. Remove from oven and sprinkle with a little more Parmesan cheese. |
