Oh I thought just for fun we would compare how the French would bake this pastry, as oppose to how an American would bake this. Now, what would the end result be? 1/ choux pastry |
125g water |
125g milk |
150g flour |
100g elle & vire french butter |
5g salt |
4 eggs |
2/ butter cream |
830g elle & vire french butter |
500g sugar |
50g water |
4 eggs |
3/ lemon pastry cream |
1l elle & vire vanilla crème brûlée dessert base |
50g custard powder |
240g elle & vire whipping cream |
15g lemon zests |
15g lemon liqueur (limoncello) |
4/ decoration |
500g sugar |
200g red pralines |
50g water |
strawberrie |
Directions:
1. 1/ Choux Pastry 2. Carry out a choux pastry with the Elle & Vire French Butter. With a pastry bag, shape a square with 20 cm sides. 3. Bake at 210°C for 20 mins. 4. 2/ Butter Cream 5. Break the eggs into a bowl and beat. Cook the sugar to 110°C. Gradually incorporate the sugar into the beaten eggs, beating rapidly. Beat for 2 mins. then cool. Incorporate the room temperature Elle & Vire French Butter cut into small pieces. 6. 3/ Lemon Pastry Cream 7. Heat 750g of the Elle & Vire Vanilla Crème Brûlée Dessert Base. Bring to a boil the remaining 250g and add the custard powder to it. Combine the two mixtures, bring to a boil again while stirring. Add the lemon zests, then cool. Add the lemon liqueur and the whipped cream slowly. 8. 4/ Decoration 9. Make a caramel with the sugar and water. Blend the butter cream and lemon pastry cream together and put it into a pastry bag with a grooved tip. 10. Decoration 11. 1 – Cut the choux pastry square into two squares at 2/3 of the square’s height 12. 2 – Soak the top in the caramel and sprinkle with the crushed red pralines 13. 3 – With the pastry bag, pipe the filling onto the bottom of the Paris Brest 14. 4 – Spread some quartered strawberries on top 15.
