The cornucopia of fruits available on the islands provides inspirations for fantastic fruit dishes. The creamy dip can be used both as a delectable topping for other fruits or for a slice of warm cake. Ingredients:
1 cup low fat cottage cheese |
3 tablespoons firmly packed brown sugar |
2 tablespoons skim milk |
1 teaspoon vanilla extract |
1/2 teaspoon coconut extract |
16 cantaloupe balls |
16 honeydew balls |
16 pineapple chunks |
16 red seedless grapes |
8 eight-inch bamboo skewers |
Directions:
1. To prepare dip: 2. In blender container, combine all dip ingredients. 3. Blend until smooth. 4. Spoon into a bowl and chill several hours or overnight. 5. To prepare kabobs:. 6. Have fruit well chilled. Alternate fruit on skewers, placing 2 pieces of each fruit on each skewer. 7. Serve with dipping sauce. |
