Rich, deep, spicy and satisfying. Proof that chicken doesn't have to be boring. Ingredients:
1 large red onion (sliced) |
1 tablespoon flour |
2 tablespoons olive oil |
450 g chicken breast fillets (chopped into chunks) |
1 tablespoon sweet paprika |
1/2 teaspoon cayenne pepper |
1 cup wine |
1 cup tomato puree |
1/2 cup water |
1 chicken stock cube |
1 teaspoon brown sugar |
1 red pepper (chopped) |
1 garlic clove (crushed) |
parsley |
2 medium potatoes (chopped into chunks) |
2 tablespoons heavy cream |
Directions:
1. Heat oil in a large pan. 2. Cook onions until soft. 3. Add chicken and cook until lightly browned. 4. Add paprika, cayenne and flour and cook for a minute. 5. Add the rest of the ingredients, except the potatoes and cream and simmer until the chicken is cooked (approx 15 minutes). 6. Boil potatoes or cook in microwave until just cooked. 7. Add cooked potatoes and cream and simmer for a couple more minutes. 8. Add salt and pepper to taste. 9. Serve with rice and sweetcorn. |
