A Watkins Spice recipe. I use sweet paprika and it really just gives just a little zing to this very sweet Hummingbird type of cake recipe. I love to try and collect differnetly delicious recipes ! Ingredients:
1 cup butter |
1 cup sugar |
1/2 teaspoon lemon extract |
1/4 teaspoon orange extract |
4 eggs |
3 cups flour |
5 teaspoons baking powder |
1/2 teaspoon salt |
3 teaspoons paprika ( sweet or smoked, each type will create a different flavor to the cake ) |
1 cup milk |
1 cup crushed pineapple -- drained |
1/2 cup shredded coconut |
1 cup golden raisins |
1 cup chopped walnuts |
Directions:
1. Cream butter, sugar and extracts. 2. Add eggs, one at a time, beating well after each addition. 3. Add milk and beat for 2 minutes. 4. Add the dry ingredients and beat well. 5. Fold in pineapple, coconut, raisins and walnuts. 6. Pour into greased 13x9-inch pan and bake at 350F for 50-60 minutes. 7. Cool and frost with plain vanilla frosting of choice. |
